Professor Bernd Schafer from the German Federal Institute for Risk Assessment (BfR) stated the need for careful roasting toasting.
The more fried toast, the more they acrylamide - warns Professor Schaefer. This substance is suspected of carcinogenic properties, ie the ability to cause cancer. Facts genotoxicity of acrylamide and property damage DNA confirmed in animal experiments, but these studies have not been conducted in humans.
Carcinogenic acrylamide occurs under strong heating of foods containing starch and an amino acid asparagine. Acrylamide begins to form at a temperature of 120 ? C. It is not known at what dose acrylamide already dangerous. It is believed that a single use of burnt toast is not dangerous, but the risk increases if a person eats them regularly.
